Tzatziki- Greek style yoghurt dip with pan fried baby carrots

I don’t like dips,” said NOONE ever!!

Dips are delicious, healthy and super easy to make. Generally when we make dips and bread at home, there is a minimum of at least 3 different dips. However, this time I decided to make only  tzatziki and add carrots to the menu. These roasted baby carrots are just the perfect fit for this cool and refreshing tzatziki dip. There is a few different variations of tzatziki out there. For me, it’s really down to the list of ingredients in this recipe. For a very long time I felt that dill was the optional ingredient and therefore never bothered to make a special trip to the shops just to buy dill. This time around, I decided to give dill a shot and I kid you not, it makes a HUGE difference to the overall flavour of the tzatziki. The only way to find out if you like dill in your tzatziki or not is to try it! Please leave your comments, Dill in tzatziki, yeah or nah?

Ingredients  for the dip                                                                                                                      

  • 1 cup Greek yoghurt
  • 5 cm piece of Lebanese cucumber –finely diced. If you prefer grated, make sure you drain out the excess juices
  • 1/3 cup olive oil
  • 1/4 cup chopped mint
  • 2 tablespoons dill
  • ½ teaspoon lemon juice (optional, I prefer mine without the lemon juice)            
  • Pepper- ½ teaspoon or to taste
  • Salt to taste

Method

  1. Combine yoghurt, olive oil, lemon juice, pepper and salt in a bowl.
  2. Mix in the finely diced cucumber, chopped mint and dill
  3. Cover and chill till you are ready to eat

Ingredients for the baby carrots

  • 6 baby carrots-washed and green leafy bits removed
  • 1 TBSP olive oil
  • Salt
  • Pepper
  • Dash of honey

Method

  1. Heat the olive oil in a pan
  2. Add the washed baby carrots to the oil,
  3. Sprinkle with salt and pepper till cooked ( you want a slightly golden brown colour)
  4. You can cook it longer depending on if you want the carrots crunchy or not
  5. Drizzle some honey and toss
  6. Serve warm with tzatziki
